The original name of this culinary recipe is "Fried perch in a fur coat". It is possible that this sounds normal to the English ear. But I, for example, as soon as I imagine this perch in a fur coat in the form of food on a platter, my appetite immediately disappears. So, let's just call it "Perch in the Dough".
In a deep frying pan, heat the oil to a very hot state.
In a separate bowl, mix two types of flour, salt, pepper and seasonings, and then carefully pour in the beer, stirring constantly. we should get a batter without lumps. Cut the perch fillet into pieces that can be fried completely. Remember that they will also be in the test. Dip each piece into the dough and fry in oil until golden brown. It is best to do this over low heat. Otherwise, the surface will burn, and the perch will remain raw inside.
Serve immediately. Garnish with sprigs of dill and finely chopped green onions. For a side dish to such fish, canned green peas or vegetable salad of cucumbers and tomatoes is best suited. Separately, we put adjika or any other spicy seasoning on the table.
