Savory Cheese Fritters
Tasty, easy to make, and perfect for breakfast! These skillet cheese fritters come together in just 20 minutes. Switch up the cheese and herbs and you've got a whole new dish. They make a great everyday snack or a party appetizer — serve them with any savory sauce or dip.

Step 1:
How do you fry cheese fritters in a skillet? Start by gathering your ingredients. Sift the flour ahead of time to aerate it. Use any cheese you like — the main thing is that it grates well and melts easily. It's best to use kefir that's a bit past its first freshness; the baking soda works better in a tangier kefir, which makes for fluffier fritters.

Use a good-sized deep bowl for the batter. Grate the cheese into it and add the chopped fresh herbs. Any herb works; I like to use fresh dill.

Crack the egg into the bowl and add a little salt and spices to taste. Stir everything together.

Pour in the kefir and add the sugar. Gradually add the sifted flour along with the baking soda, stirring to form a batter. Don't dump in all the flour at once — you may need a little more or less than the recipe states. Go by the consistency of the batter.

The finished fritter batter should be fairly thick.

Pour vegetable oil into a hot skillet and spoon in small mounds of batter. Fry the fritters over low heat for 1–2 minutes per side. They need time to cook through inside, so keep the heat gentle.

Lift the fritters out of the pan and set them on a paper towel to blot off the excess oil. To serve, pair these fritters with any number of sauces — a cheese sauce or a tangy berry sauce, for example. Enjoy!
