Really tasty, made from simple ingredients, and perfect for a quick dinner! This skillet chicken with mushrooms can be served any time of day. Round it out with a sauce or gravy if you like. You can cut up a whole chicken and leave the pieces bone-in, or use boneless chicken. And any mushrooms will do!

    How do you make skillet chicken with mushrooms? Start by gathering your ingredients. You can cut up a whole chicken and leave the pieces bone-in, or use boneless chicken — that's what I did here. You can use either breast or thigh meat; I like to use thigh meat for frying, since it's juicier than breast. Choose medium-sized button mushrooms. Peel and wash the onion and carrot. Any mushrooms will work.

    Rinse the chicken under running water and pat it dry with paper towels to remove excess moisture. Then cut the meat into long strips.

    Wash the fresh mushrooms and quarter them.

    Use a good flat-bottomed skillet for frying. Heat it until hot and add a little vegetable oil. Add the chopped chicken and fry over medium heat until lightly golden, stirring now and then so it doesn't scorch. Then add the mushrooms.

    Now prep the onion and carrot. Grate the carrot on the coarse side of a box grater and chop the onion. Add both to the skillet with the chicken and mushrooms. Stir everything together. Add a little salt, spices, and minced garlic. A poultry seasoning and a bit of ground pepper are great here. Fry it all together over low heat for 10–15 minutes. By then the chicken is cooked through and the vegetables are soft.

  • Buy fresh, medium-sized mushrooms — snowy white, with no spots, damage, or off smell. They shouldn't feel slippery to the touch. Rinse them well under warm or cold running water to remove any grit, and trim away any bad spots. Tiny mushrooms under 3/4 inch (2 cm) don't need peeling — just rinse them well. Larger ones are best peeled of their outer skin.
  • Every oil is only healthy up to a certain temperature — its smoke point — beyond which it starts to burn and forms harmful compounds. It's worth learning which oil is best for frying and which is better left out of the pan.
  • Important! The wrong pan can ruin even the best recipe. It pays to know how to choose the right skillet for different dishes.
