Banana Kefir Pancakes

Step 1:
How do you make banana kefir pancakes? Gather your ingredients. Use overripe bananas with dark spots on the peel — they're the sweetest. Peel the banana, cut it into pieces, and drop it into a deep bowl. Add the sugar.

Mash the banana to a puree with a fork, or blend it smooth. The ingredients should be at room temperature, so take the egg and kefir out of the refrigerator ahead of time. Crack the egg into the bowl with the banana and add a pinch of salt. Beat with a fork or mixer until a little foam forms.

Pour the kefir into another bowl — it should be slightly warmer than room temperature. If you didn't take it out in time, warm it gently over a water bath. Add the banana puree to the kefir and stir well so everything blends together.

Sift the flour to aerate it — it makes the pancakes fluffier. Add it to the wet mixture a little at a time, stirring well after each addition. Add the baking powder along with the flour. Whisk the batter until smooth.

The batter should have the consistency of thick sour cream. You may need a bit more or less flour than listed, since flour density varies. If you want especially fluffy pancakes, make the batter a little thicker. Let it rest at room temperature for a few minutes.

Meanwhile, heat the vegetable oil in a skillet over medium heat. Spoon the batter into the pan, shaping round pancakes.

Fry the pancakes until golden on both sides. To make sure they cook through, cover the pan with a lid for a couple of minutes. Take them off the pan and serve — with sour cream, jam, or sweetened condensed milk. Enjoy!
