Okonomiyaki

An easy way to make a quick and healthy snack! This is rather a Russian version of the Japanese "fasfud", which is a fried flatbread with different fillings. In Japan, okonomiyaki is poured with a special sauce and sprinkled with katsuobushi. Our housewives interpreted this dish under the Russian cuisine.

    Prepare all the ingredients for cooking "Japanese pizza".

    Chop the white cabbage very finely into cubes.

    Cut the green onion feathers into small rings.

    Pour water into a bowl, add salt, drive in a chicken egg and pour flour sifted through a sieve. Mix the dough thoroughly with a whisk so that there are no lumps.

    Pour soy sauce into the dough and beat the whisk again. The consistency of the dough should resemble sour cream.

    Pour chopped cabbage and green onions into a bowl, mix.

    Cut pork, champignons, bell peppers and parsley in an arbitrary shape. We divide the products into 2 parts.

    The first half of the prepared products are lightly fried in vegetable oil until the meat is ready.

    Fill the fried filling with half of the dough, form a small tortilla, close the lid and cook for 15 minutes on low heat. For convenience, you can use a frying pan with a small diameter, then the cake will turn out to be a more regular round shape.

    After 15 minutes, turn over the okonomiyaki. For convenience, we use a plate, cover the pan again with a lid and cook over low heat for another 10 minutes.

    We do the same procedure with the remaining ingredients. There should be 2 "pizzas". We put warm okonomiyaki on plates and pour sauces over it. You can use soy sauce, ketchup, mayonnaise. Sprinkle with green onions on top, cut into pieces and serve in portions.

In Japan, okonomiyaki is fried on a hot metal plate called teppan. And in restaurants, the Japanese fry tortillas on their own on their tables, which are equipped with these very stoves.
The basis for okonomiyaki is not treason: flour, egg, water (Dashi broth) and cabbage. But with fillings, the situation is different. In different provinces of Japan, preferences are given to different fillings. Here you can experiment: seafood, meat, fish, mushrooms, noodles, etc.
Unfortunately, the dough according to this recipe turned out to be much thinner than it is prepared in Japan. It does not hold its shape and spreads. In the absence of a small frying pan, I had to cook one large tortilla. Thus, more flour should be added, and chopped cabbage too.
