Step 1:
Prepare all the necessary products. I remind you that when it comes to baking, all products should be the same room temperature. Kefir take any percentage of fat content. In principle, not only kefir is suitable, but any fermented milk product: yogurt, snowball and even ryazhenka. I recommend using flour of the first grade. The flour of the highest grade is almost always snow-white, which means it is bleached in production with the help of chlorine.
Step 2:
Pour kefir into a bowl in which you will make dough for pancakes. Take bigger dishes, because kefir and dough will greatly increase in volume. Heat the kefir so that it is slightly "curdled". In a microwave oven, this is 1 minute at a power of 1000.
Step 3:
Add baking soda. It is thanks to soda that pancakes always turn out lush, although the dough contains neither eggs nor yeast.
Step 4:
Add a little salt. Where sugar is used, salt should always be added. Even in sweet dishes. So the taste will be much more balanced.
Step 5:
Add sugar and ground cinnamon to taste. I have regular white sugar. But if you wish, you can use cane - then the pancakes will have a light caramel taste. Or coconut sugar - then the pancakes will not only be vanilla, but also with a light coconut flavor.
Step 6:
Mix everything. Kefir will begin to bubble and greatly increase in volume. At this stage, you can add some of your favorite spices to the dough. - everything that suits your taste for pancakes!

Add flour.

The process of sifting flour is very important for baking: during it, it is saturated with oxygen and the finished baking turns out to be more airy. Therefore, I recommend using a sieve.
Step 9:
Mix the dough until smooth. The consistency of it should be like thick sour cream. Different flour has different gluten, so do not add all the flour at once - it may need a little more or a little less. Focus on the density of the dough!
Step 10:
Heat the vegetable oil in a frying pan. It can be any vegetable, but it must be refined, because we will fry on it, and refined oil does not burn. Spoon out a little dough. Fry the pancakes for 2-3 minutes on low heat.
Step 11:
Then turn the pancakes over and cook for another 1-2 minutes.
Step 12:
