Sweet Semolina Patties with Raisins and Citrus

Take a trip back to childhood with this dish — simple, but so good. I remember these patties being served with fruit kissel back in preschool! I'm all grown up now, and today I felt like making semolina patties myself, both to revisit my own childhood and, of course, to bring my kids a little joy. Turns out they're really easy, so here goes...

    Put the milk on the stove — we're making a basic semolina porridge. Once the milk comes to a boil, pour in the semolina in a thin, steady stream, stirring constantly.

    Cook until it thickens — this happens fast.

    Here's our semolina porridge — nice and very thick.

    Add the sugar and a pinch of salt (I always include it). It's ideally added while cooking, but as I said, mine thickened so fast I just didn't get to it in time.

    Add the vanilla, raisins, and tangerine zest.

    Now add the egg and flour and mix well — a hand mixer works best here.

    You'll end up with a smooth, even mixture.

    With damp hands, shape the mixture into patties.

    Coat them in breadcrumbs.

    Melt a pat of butter in the skillet.

    Fry the patties in the butter.

    Do this over low heat with the lid on.

    I served them with apricot jam — delicious.

  • The kids loved these patties — turns out they don't serve them in preschool anymore! You can also serve them with fruit kissel, which is just as good. And to make them a bit lighter, coat them in shredded coconut and bake them in the oven instead. Give it a try!
