Grilled Shark Steak

Shark meat is fairly dense, so the steaks turn out hearty and filling. You can cook them on any grill you have, and they take next to no time — like any fish, shark cooks through very quickly.

  • Shark meat is something of a delicacy around here, but you can still find this kind of exotic fish in the larger supermarkets. So how do you cook it? Good question! But there's no secret — shark, like any other fish, cooks up very simply and quickly.
  • First, wash the steak. Do it thoroughly under running water, then pat it dry with paper towels. If the shark is frozen — and it most likely will be — you'll need to thaw it first, the right way, which is the key to a good result. Never use the microwave or drop the fish in hot water. Ideally, move the frozen steak from the freezer to another compartment of the fridge; over 12–18 hours it will thaw completely and slowly, preserving the steak's good flavor and most of its vitamins.
  • Heat the grill well, to maximum. While it heats, go back to the steak: brush it all over with olive oil, rub it with salt, and season it with the spices, working them into the flesh.
  • Lay the prepared steak on the grill grate, lightly oiled. Grill the shark for 3–4 minutes, then carefully flip it and grill the other side for another 3–4 minutes.
  • The last step is a squeeze of lemon juice over the fish steak.
  • That's it — the dish is ready. Carefully transfer the grilled shark steak from the grate to a wide, flat plate. Garnish with fresh herbs if you like (parsley, dill, rosemary, or thyme all work). A glass of good white wine wouldn't go amiss — it pairs perfectly with grilled fish.
  • If you like, serve the steak with any side — vegetables, pasta, or grains — for a full, hearty dinner.
