Grilled Pork Loin, No Marinade
Pork loin without a marinade is even easier than kebabs. In this recipe I'll show you how to grill pork loin without marinating it. Pork loin is the cut from the back of the hog that includes not just meat but the ribs, part of the backbone, and some fat. It's good for you, too — it digests easily and contains B vitamins, which are important for a healthy nervous system and metabolism.
Cooking method

Step 1:
Gather all the ingredients. Pick fresh, firm meat. Rinse it under running water and pat it dry with paper towels.

Cut the fresh, clean loin into even steaks (we ended up with 5).

Mix the sauce ingredients in a handy bowl, add the olive oil, and stir well. If you're cooking somewhere other than home — at a summer cottage, like us — pour the sauce into a travel-friendly container, and don't forget a silicone brush for basting the steaks as they cook.

Step 4:
Cook the loin over the coals on a grill basket. Build the coals from fruitwood, or from oak, birch, or alder. Once the wood has burned down, lay the steaks out evenly in the basket. Set the basket over the coals so it's easy to flip while cooking.

Step 5:
Throughout the grilling, baste the meat generously with the sauce using the silicone brush, on both sides, until it's fully cooked. The cooking time depends on the thickness and quality of the steaks.
