Grilled Tuna Steak

An appetizing fish dish everyone will love — go for it! A grilled tuna steak is a wonderfully simple yet delicious dish. The big upside is how little effort and time it takes. Tuna is a delicious fish to begin with, and grilled it's beyond praise — juicy inside, with a nice crust on top. So tasty and appetizing, and elegant enough for a special-occasion table.

  • Preheat the grill to high. Meanwhile, fold a piece of foil over several times to make a "tray" for the fish steak. The foil needs to be sturdy enough to hold a heavy steak. Brush it with a little vegetable oil, then set it on some kind of dish you can use to carry the fish out to the grill.
  • Place the fish steak in the foil tray. Drizzle it with lemon juice, then white wine — choose a dry, good-quality wine, since it affects the flavor of the finished dish. Set a small pat of butter on top of the fish.
  • In a small bowl, mix the salt and seasonings: garlic powder, onion powder, and the dried herbs (oregano, basil, dill). Stir well and sprinkle the mixture evenly over the fish steak. Then dust the top with sweet paprika.
  • Set the steak, still in its foil, on the hot grill. Cook for 10 minutes, no more. It's very important not to overcook it, or the fish will turn dry and bland, lose its juiciness, and fall apart. One more key point: don't flip the steak!
  • The tuna is done when it's turned light pink and opaque but still fairly firm — press it with the back of a fork and it should give gently. Carefully lift the finished steak out with a spatula onto a nice wide plate and garnish with lime slices if you like. You can also squeeze a little lime juice over the top.
  • Serve the fish with fresh herbs. A glass of good white wine alongside wouldn't hurt, either.
