    Rinse the chicken livers, pat them dry with a paper towel, trim off any membranes, and season with salt. Fry them in vegetable oil on both sides. Transfer to a paper towel to blot off the excess oil.

    Crush the pistachios (a mallet works well). Rinse the cherry tomatoes and cut them into halves or quarters (optional).

    Cut the fried chicken livers into slices or strips (optional).

    Wash and dry the head lettuce, tear it into pieces by hand, combine it with the other greens, and toss well.

    Make the dressing. Stir together the mustard, honey, and lemon juice. Add the olive oil and whisk.

    Mound the greens on a serving dish however you like, arrange the livers and tomatoes on top, drizzle with the dressing, and sprinkle with pistachios. Toss everything together if you prefer.
