Grilled Tuna Steaks

A great alternative to meat dishes for a cookout. Grilled tuna steaks are very easy to make, and much faster than meat. To get the fish cooked through with a golden, crisp exterior while staying juicy and tender inside, just a few minutes per side is enough. It doesn't need a long marinade, either. And on top of all that, tuna has a superb flavor and wonderful aroma that won't leave anyone indifferent!

  • Tuna is one of the best-known and best-loved fish out there, prized for its exceptional flavor. It's also a protein powerhouse — so good for you that it's sometimes called "sea beef." Although it doesn't swim in local waters, it turns up more and more often at fish markets and in the specialty section of the supermarket. You can buy individual cuts from the (usually large) fish, or ready-cut steaks, which is certainly handy. First, rinse the fish pieces well under cool running water, then pat them dry with paper towels. If the tuna steaks are frozen, thaw them at room temperature first. In a separate bowl, mix the extra-virgin olive oil and lime juice. Add sea salt and dry spices to taste. You can swap the lime juice for lemon; the marinade's flavor will shift a bit, but lemon pairs beautifully with this fish too. Put the tuna steaks in a tight, sealable bag and pour in the marinade. Seal (or tie) the bag and turn it this way and that so the marinade coats the entire surface of each steak. Refrigerate the bag for about half an hour. In that time the fish soaks up the marinade, which makes it softer, more tender, and richer in flavor. When the time's up, you're ready to grill. Take the fish out of the bag and shake off the excess marinade with a few sharp flicks — you won't need it anymore. Grill the tuna over medium heat for 5 minutes per side, until golden and appetizing. Tuna steaks are best served with fresh herbs, vegetables, and even fruit — they go perfectly with all kinds of citrus, for instance. Enjoy!
