Charcoal-Grilled Salmon Steak

  • This dish is about as simple as it gets. And a big bonus: fish steaks cook far faster than beef or pork steaks — no more than 10 minutes of grilling. Of course, you'll need extra time to build the fire and get the grill ready. The steaks turn out just as tasty and satisfying as meat ones. A great choice for a get-together with family or friends in the fresh air.
  • First, get the grill and grate ready. You can use ready-made charcoal to speed things up, or do it the old-fashioned way and wait for the wood to burn down. In that case, choose mostly fruitwood — never conifers — since it gives the fish steaks a pleasant, subtle flavor. So, the wood burns down and the coals are nearly ready. Brush the grill grate with a little vegetable oil and set it over the coals. In a small bowl, combine the vegetable oil and soy sauce and mix well. Add the ground coriander, garlic powder, and chili powder (optional — leave it out if you'd rather skip the heat), plus salt (add it little by little, keeping in mind that soy sauce is already salty). Mix everything thoroughly again.
  • The salmon steaks should already be thawed, rinsed, and dried — completely ready to grill. Rub them all over with the oil mixture. Lay the prepared steaks on the grate. Grill for 3–4 minutes, then flip and hold them over the coals for the same amount of time. Serve the finished steaks hot, with fresh herbs, lemon wedges, and/or your favorite fish sauce.
