Kystyby with Mashed Potatoes
Deliciously filling Tatar hand pies for the whole family! Kystyby (a Tatar folded flatbread) is a very satisfying dish. I often make it even for a holiday spread, though I'll switch up the filling with different add-ins. My child takes it to school, and I know he won't go hungry. It's a versatile dish — be sure to give it a try.

- Make the filling. Boil the potatoes in salted water, drain, and mash them. 2. Dice the onion and sauté it in butter until golden. 3. Stir the remaining butter and the sautéed onion into the mashed potatoes. 3. Add the sugar, salt, egg, and butter to the warm milk (I melt the butter first). 4. Sift in the flour and mix it into the wet ingredients. Knead the dough — it should be soft and stretchy and shouldn't stick to your hands. Just don't overwork it or add too much flour! 5. Let the dough rest for 10 minutes, then divide it into 12 equal pieces. 6. Roll each piece into a round about 5-6 inches (14-16 cm) across. 7. Cook the flatbreads in a dry skillet for 2 minutes per side. 8. Let each finished flatbread cool slightly. Place potato filling on one half and fold the other half over it. 9. Brush with melted butter. Enjoy!
