Grilled Chicken Tapaka (Georgian-Style Flattened Chicken)
Cooking chicken on the grill couldn't be easier — give it a try! We grill kebabs almost every time we're out in nature, and I wanted something new that was just as tasty. This turned out to be a wonderful chicken with a crispy, crackling skin. Just marinate it ahead of time; it grills up pretty fast.

- Wash and dry the chicken. Cut it open down the breast so it lies flat. 3. Pound it on both sides with a mallet or the back of a heavy knife. 4. Rub it all over with salt, spices, and lemon juice. Marinate for 2 to 2.5 hours. 5. Meanwhile, get the grill ready. 6. Grill over the grate for 30-40 minutes, turning it now and then. Enjoy!
