Pancakes with Cottage Cheese and Sour Cream
Tender, flavorful, and mouthwatering pancakes for a morning breakfast! Thin pancakes stuffed with cottage cheese make an incredibly tasty and filling meal. I love this dish either plain or with all kinds of fillings — though I lean toward sweet ones (fruit and berries). My husband, on the other hand, is a fan of meat and cottage cheese fillings, so I've gotten plenty of practice making them. So here's my cottage cheese pancake recipe — and it's really not all that complicated.

- To start, whisk the eggs, sugar, and salt together with a whisk or a mixer. Pour the milk into that mixture, add the flour, and stir everything together thoroughly. Add the vegetable oil and stir well one more time. Set a lightly oiled crêpe pan (or nonstick skillet) over medium heat and cook the pancakes. Once all the pancakes are done, make the filling: mash the cottage cheese with the sugar, sour cream, and egg yolks, and don't forget to season with a pinch of salt to taste. Now fill the pancakes — place a tablespoon of the cottage cheese mixture on each one and fold it up like an envelope. When they're all filled, fry them in a little oil on both sides for about a minute and a half to two minutes. Enjoy!
