  • I'd encourage everyone to try this exotic dish, a recipe that comes to us straight from sunny Greece. Greek cooking has always made wonderful use of seafood, and this is a great example of authentic Greek fare — it's sure to be the star of any festive table. Start by slicing the onions into rounds. Set a deep skillet over the heat and add a little butter along with a little olive oil. Once the fats are hot, add the onion and cook until translucent. Meanwhile, rinse the raisins and cut the dried apricots in half lengthwise. Slice the apples into small pieces, and do the same with the ginger, cutting it into thin slivers. Add all of this to the onion in the skillet and sauté, stirring, for about 5-10 minutes. Now for the star of the show. If your octopus is frozen, thaw it first. Rinse it well under cold water, then clean and gut it. Cut the octopus into small pieces and add them to the skillet with the onion and fruit. Season the mixture with salt and pepper to taste, pour in a cup of Madeira, and add the cinnamon and ginger. Continue to simmer, stirring, until done. A word of warning: how long the octopus takes to become tender depends a great deal on the octopus itself. Some are ready in 5 minutes, while others are so dense they need more than an hour of simmering — so keep tasting as you go. Once the octopus is tender, plate it and bring it to the table.
