  • The Vietnamese are big fans of squid — or rather, they love eating it. You can buy it almost anywhere in the country, at any market or shop, so it's no surprise that squid shows up in so many Vietnamese recipes. This is genuine Vietnamese fare. Give this dish a try — Vietnamese squid in sweet-and-sour sauce. It's delicious, filling, and good for you. Start by rinsing the squid in cold water, cleaning it, and cutting it into pieces. Season with salt and pepper. (If the squid is frozen, be sure to thaw it first.) Chop the tomatoes, dill, and onion. Heat the vegetable oil in a skillet and fry the squid, stirring, for 3-5 minutes. Then add the tomatoes, dill, sugar, and onion. Simmer for another minute or so, then season the pan generously with pepper. The tomatoes should soften and release their juices. At that point the squid is done and you can take the pan off the heat. Vietnamese squid in sweet-and-sour sauce is most often served over white rice, but it also works beautifully on its own as a hot appetizer.
