Step 1:
How to make tortillas without yeast? Prepare all the products. I have kefir of 3.2% fat content. Keep in mind that the amount of flour used will depend on the fat content of kefir: less fatty kefir will require a little more flour than indicated. Take kefir out of the refrigerator in advance so that it has time to warm up to room temperature.
Step 2:
Sift the flour to saturate it with oxygen. The quality of baking will largely depend on this. In a bowl of suitable size, mix the sifted flour, baking soda and salt. Make a recess in the middle.
Step 3:
Pour liquid kefir and refined vegetable oil to the dry ingredients. Baking soda is not required to be extinguished with vinegar, since a fermented milk drink will perfectly cope with this task.
Step 4:
Knead the soft dough. Flour may need more or less. It all depends on its properties and the fat content of the kefir you use. Focus on the desired consistency of the dough. It should be soft, sticky, plastic, but not cool. Cover the dough with a towel and leave for 20 minutes, let it rest.
Step 5:
Divide the dough into four equal parts. From each piece , form tortillas no more than 1 cm thick . Prick the surface of each workpiece with a fork so that they rise evenly when baking. Place on a baking sheet lined with parchment. Preheat the oven to 180 degrees in advance (10-15 minutes before cooking). Bake for about 20-25 minutes. The baking time and temperature may differ from those indicated. Focus on the specifics of your technique.
Step 6:
When the top of the baking is browned, check the readiness with a wooden toothpick. Puncture it, if it came out dry, then it's done. Remove the baking sheet from the oven. Cool the tortillas completely. Serve them instead of bread with different dishes. It will be delicious with tea or coffee. Or make delicious sandwiches (for example, with cream cheese and vegetables).
Rye tortillas turn out soft and fluffy. They are stored in a paper bag for quite a long time.
You can add 1 teaspoon of rye malt to the dough. With it, the pastries will be even more fragrant. You can also pour in a tablespoon of liquid natural honey. If necessary, melt it first in the microwave or in a water bath.
Before baking, the blanks can be sprinkled with flax seeds.
