Udon Noodles with Chicken, Teriyaki Sauce, and Vegetables
A bright, light, incredibly tasty Japanese dish! Make udon noodles with chicken and vegetables in teriyaki sauce and you'll fall for this dish the first time! It's fast and incredibly easy to make. Perfect for a family or romantic dinner!

Step 1:
How do you make udon with chicken and vegetables? Get all the ingredients ready. You can swap the chicken for pork or beef, and choose the vegetables to your taste — add zucchini, eggplant, and so on.

Peel the onion, garlic, carrot, and ginger. Halve the bell pepper and remove the seeds and core. Rinse everything under cold running water and pat dry with paper towels.

Wash and dry the chicken breast. Cut the meat into thin strips.

Dice the onion small, cut the bell pepper into thin strips, and shred the carrot on a Korean-carrot grater or cut it by hand into thin, long sticks.

Chop the ginger with a sharp knife. Heat the vegetable oil in a skillet and fry the ginger over medium heat for about a minute. Stir constantly so it doesn't scorch. What pan is best for this dish? A wok, or a regular skillet with high sides, is ideal.

Add the chicken to fry. Cook, stirring, for about five minutes.

Meanwhile, boil the udon noodles per the package directions.

Add the onion to the pan and fry it with the chicken for another minute or two.

Next it's the carrot's turn. Add it and cook for two minutes.

Add the bell pepper to everything and fry for about a minute.

Add the minced garlic, soy sauce, and teriyaki sauce to the pan. At this point you can add chili pepper if you like. Mix everything, cover, and simmer over low heat for a minute or two.

Drain the cooked noodles in a colander. Add them to the pan.

Toss everything thoroughly but gently. Cover and simmer all together for one more minute. Taste the finished dish, and if it's missing something, add it (salt, pepper, etc.).

Sprinkle the chicken noodles with fresh herbs and sesame seeds if you like. Serve!
- Scallions go really well with the noodles and chicken. If you have a few on hand, by all means add them to the finished dish, cut into small pieces first. Enjoy!
- You can swap the chicken for turkey or any other meat you like. Just keep in mind the cooking time and the dish's calorie count will change.
