Kurnik (chicken pie) with potato and chicken in puff pastry, baked

Gorgeous, mouthwatering, with eye-catching decoration! Kurnik is a dish you'll have to fuss over a bit. Inside the pie is a filling of crêpes and chicken; on top, a beautifully decorated cap of homemade puff pastry. Using store-bought pastry makes the whole thing much easier.

Cooking method

    How do you make a puff-pastry kurnik? Before you start, take the puff pastry out of the freezer so it has time to thaw. Begin with the fillings. How do you make the fillings? The first is mashed potato with onion. Peel the onion and cut it into small cubes. Heat a skillet over low heat and pour in some vegetable oil. Add the onion and sauté, stirring, for a few minutes until translucent.

    Wash and peel the potatoes and put them in a pot of clean water. Set it over medium heat, bring to a boil, and add salt. Lower the heat and cook the potatoes until tender, about 25 minutes. Test with the tip of a knife — it should slide in easily. Drain the potatoes, then mash them.

    Add the sautéed onion to the potatoes. Stir. The first filling is ready.

    Make the second filling — boiled egg and green onion. Boil the eggs, cool them, then peel them. Chop the eggs into small pieces. Rinse the green onion well, dry it, and chop it finely too. Combine the eggs and green onion and season with salt. Stir. The second filling is ready.

    The third filling is boiled chicken breast. How do you cook chicken breast? Bring water to a boil in a pot and lower the meat in. Add salt. Cook the chicken for 30 minutes at a gentle simmer over low heat. Cool the cooked breast, take the meat off any bones, and cut it into small pieces. You can add pepper and spices to taste. The filling is ready.

    Make crêpes to layer between the fillings. For the batter, combine the milk, vegetable oil, egg white (save the yolk for glazing), baking soda, salt, sugar, and flour. Whisk it all together. You should get a thin, smooth batter.

    Cook the crêpes on both sides in a well-heated skillet. If needed, you can add a little vegetable oil to the pan. Mine is a non-stick skillet, so I cook them without any oil. I got three crêpes — exactly what we need.

    Roll out the thawed puff pastry a little. Cut a circle from it, slightly larger in diameter than a crêpe.

    Assemble the pie. For the first layer, spread on the mashed potato with sautéed onion.

    Cover it with a crêpe. Press down gently.

    The next layer is the egg with green onion.

    Roll out the second half of the puff pastry large enough to cover all the layers on top. Drape it over the pie. Trim off the excess with a knife or scissors. Pinch the edges to seal. Use the dough scraps to make various decorations.

    Brush the pie with the beaten egg yolk. Bake the kurnik in an oven preheated to 350°F (180°C) for 25 minutes. That's plenty of time, since the filling is already cooked — you just need to wait for the pastry to bake through and brown. Let the finished kurnik cool a little and serve. Enjoy!
