Lasagna with Ground Meat, Cheese, and Vegetables

A hearty dish that's easy to make. Indescribably delicious!!! The recipe may be far from a perfect Italian one, but it's within reach for anyone. With lasagna you can let your imagination run wild — make it with any filling and any sauce. Enjoy! In Kazakhstan they sell sochni for beshbarmak (a national dish); they're a lot like lasagna sheets and taste every bit as good as the Italian ones! Our home cooks adapted them for lasagna — homemade lasagna on the cheap. Of course, if you don't have them, you can make the sheets yourself or buy them at the store.

  • Pour oil into a skillet, add the finely chopped onion, minced garlic, and grated carrot (medium grater), and fry until golden, stirring. Add the lean ground meat and herbs and cook until the juices reduce (but not completely!). Peel the tomatoes, chop them finely, and add them along with the tomato paste to the meat; season with salt and pepper and simmer until thick. Meanwhile, make the sauce: melt the butter in a saucepan, add the flour, and pour in the milk while stirring. Stir thoroughly to avoid lumps. Cook until thickened. Grate the cheese on a fine grater. Grease a baking dish, lay down lasagna sheets, pour over sauce, spread the meat mixture, sprinkle with cheese, and top with lasagna sheets again. Repeat this three times. Cover with foil and bake in an oven preheated to 400°F (200°C) for 40 minutes; take it out, remove the foil, and bake another 10 minutes. The homemade lasagna is ready.
