  • There are many recipes for chicken salads with pineapple, but it's the use of smoked meat and canned fruit that achieves such a balanced, delicate, yet piquant flavor. You can use any part of the smoked chicken, but the breast is best. It's meaty, skinless, easy to cut, and looks beautiful in the finished dish. It's better to boil the eggs for the salad ahead of time. If they've already cooled by the time you start cutting the chicken, it cuts down the total prep time significantly. Traditionally, in layered salads each layer is sprinkled with a little salt. That's not needed here - the chicken is already fully cooked and needs no extra seasoning, and there's enough salt in the mayonnaise to season the rest of the ingredients. Cut the chicken into small cubes and spread it in an even layer on the bottom of a wide dish, which is what you'll serve the finished salad in. Peel the onion, wash it, and chop it finely - into cubes or thin strips, as you like. Spread the onion over the chicken and brush it with a little mayonnaise. Peel the hard-boiled eggs and chop them into small cubes. Spread the eggs over the chicken, distributing them evenly so there are no gaps or mounds. Cover with a thin layer of mayonnaise. Grate hard cheese of any kind on a coarse grater and sprinkle it evenly over the previous layer. Brush with mayonnaise and move on to the final step. Cut the canned pineapple into cubes. If you chose pineapple chunks rather than rings, tip the amount you need into a sieve and let it drain for a few minutes. Distribute the pineapple pieces evenly over the surface of the salad, and you can serve it. It's better not to wait but to treat your guests right after making it. Cut vertically, it looks great with clearly defined layers, and all the ingredients combine beautifully. Enjoy!
