    Gather all the ingredients you'll need. Of course, it's best to make this appetizer in vegetable season, when tomatoes are fresh and fragrant. If you're making it in winter, try to use meatier tomatoes - but I always go by smell when picking tomatoes and choose the most fragrant ones. For this appetizer the tomatoes should be fairly large, though you can use cherry tomatoes if you're making it for a buffet. Any herbs will do - the main thing is that they're fresh.

    You can use any farmer's cheese for this dish - ideally homemade. Low-fat or even dry-curd cheese works perfectly. If your farmer's cheese is soft, you can reduce the amount of sour cream - the main thing is that the mixture holds its shape well. You can also replace the sour cream with low-fat yogurt. Mix the farmer's cheese and sour cream and add a little salt to the mixture. You can add some of your favorite spices: if you like it spicier, you can use hot pepper or sweet paprika.

    Wash the herbs well, dry them, chop them, and add them to the cheese mixture. Lately I've come to like chopping herbs with scissors rather than a knife. It's very handy!

    Peel the garlic, chop it, and add it to the cheese as well. I grate the garlic on a fine grater, but you can chop it with a knife or put it through a press. If you don't have fresh garlic, you can use garlic powder.

    Mix the mixture well until smooth. For a more piquant flavor, you can actually add a little mayonnaise or replace the sour cream with it entirely.

    Wash the tomatoes well, dry them, and carefully cut off the tops. If the tomatoes don't stand very steadily, trim a little off the bottom too for more stability.

    Scoop out the centers, leaving walls of medium thickness. Don't salt the tomatoes themselves, or they'll release a lot of liquid and the appetizer will be too watery.

    Fill the tomato cups with the cheese mixture and serve right away. The tomato, farmer's cheese, and garlic appetizer is ready. Enjoy!
