  • Marinades whose main ingredient is mustard are very popular in our country and far beyond it. Sharp, slightly tangy mustard gives meat a special softness and tenderness and adds a subtle, spicy aroma. Mustard pairs especially well and most harmoniously with pork, particularly pork ribs. In this case, the mustard marinade seems to cut through the excess fat of juicy pork and gives it a pleasant, sharp taste. Plus, mustard in a marinade combines beautifully with all the other ingredients, such as olive oil, citrus juice, and the many herbs often used in such sauces. There are several types of mustard. The most common are traditional strong Russian, grainy Dijon, sweet American, mild Bavarian, delicate lemon, and others. You can use any of these in the marinade, depending on your personal taste. So, making a marinade for pork ribs isn't hard at all. Pour olive oil into a bowl or other container (you can use any vegetable oil, but olive is much tastier). Then add freshly squeezed lemon juice and mustard (choose to your taste). Next, using a whisk or an ordinary fork, beat this mixture, blending all the ingredients well. Peel the garlic, separate it into cloves, and wash it. Then mince it — you can use a garlic press or a fine grater, but it's best to put the garlic on a cutting board, crush it with the flat side of a wide knife, and chop. This way the garlic releases its juice and infuses the marinade. Peel the onion and chop it into very small cubes. Add the minced garlic and onion to the marinade and stir again. Next, add spices. Use whichever you like best or those that suit pork. Once the spices are added and stirred in, the mustard marinade is ready.
