- A lot of people don't care for celery stalks because of their distinctive aroma. I think that's a shame, since this vegetable is rich in vitamins and minerals. For anyone watching their health, celery goes with just about any meal. In this salad it blends in beautifully and doesn't overpower anything. If the mayonnaise in this celery-stalk salad bothers you, go ahead and swap it for low-fat sour cream or plain unsweetened yogurt. Hard-boil the eggs. Wash and dry the vegetables well. Cut the cucumbers into small half-moons, the napa cabbage into thin strips, and the celery stalks into pieces. Combine everything with the canned corn and the chopped boiled eggs. Season with salt and dress with mayonnaise. There you have it — a really tasty, wholesome salad. If you don't have napa cabbage on hand, you can use a little shredded green cabbage instead; it's just as good. Enjoy!
