Juicy Classic Meat Patties (Kotlety) in a Skillet

A tasty, filling dish for any weeknight! Homemade meat patties are a hit with absolutely everyone — and for good reason. When I make them, the first panful disappears before it even cools, no side dish required. People just grab them on the go — "just for a taste," so they say. I think you'll love them too.

Cooking method

    Use ground meat of whatever kind you like — a blend works great too. I'm using ground pork. Put the ground meat in a roomy bowl where you'll mix everything together.

    Peel the onions and rinse them in cold water. Cut each into a few pieces so they feed easily through a meat grinder. Grind the peeled onion and add it to the bowl with the meat.

    Soak the bread in the milk and let it sit until saturated. Then squeeze out the excess milk and run it through the grinder as well.

    Add the ground bread to the bowl with the meat. Season with a little salt and spices. Mix everything well — your hands are the easiest tool for the job. The mixture should be smooth and even.

    Now work the mixture by throwing it against the bowl: scoop up a handful and slap it back down, over and over. The mixture shouldn't be too loose, and this slapping makes it more cohesive and elastic. This simple step keeps the finished patties tender and juicy while still holding together in the pan. If you're worried they'll fall apart, you can add an egg, but to my taste that makes them rubbery.

    Pour some breadcrumbs onto a plate. Scoop up a portion of the meat mixture, shape it into a patty, and coat it all over in the breadcrumbs.

    Pour a little vegetable oil into a nonstick skillet and heat it until hot. Add the shaped patties and fry over medium heat for 2–3 minutes, until golden brown.

    Then flip the patties and brown them the same way on the other side. These patties go with any side and fresh vegetables. Enjoy!

  • You can use store-bought ground meat or grind your own at home. When I make patties, I mix up a big batch. I fry one portion right away for the family's lunch or dinner, then shape the rest into patties, lay them on a board, and freeze them. Once frozen, they can go into a bag. It's a really handy way to cook ahead — you can drop them straight onto a hot skillet without thawing.
