Cooking method

Cooking time: 40 min
  1. Step 1:

    Step 1

How do you make pan-fried zucchini rings with sausage and cheese? Start by gathering your ingredients. I'm using a young zucchini with a tender skin, weighing a little over 2 pounds (about 1 kg). Any cheese works here — just make sure it grates easily. Rinse the zucchini, tomatoes, and onion well.

  2. Step 2:

    Step 2

Slice the zucchini into rounds about 3/4 inch (1.5–2 cm) thick. Scoop out the center of each round to make a ring.

  3. Step 3:

    Step 3

Set up two bowls for dredging. Beat 2 eggs in one, and put the flour in the other.

  4. Step 4:

    Step 4

Finely dice the bologna. Grate the cheese. Slice the tomatoes into rounds about 1/4 inch (0.5 cm) thick.

  5. Step 5:

    Step 5

Add the remaining 2 eggs, the sour cream, and the finely chopped green onion to the bowl of diced bologna. Stir it all together.

  6. Step 6:

    Step 6

Dip each zucchini ring into the beaten egg, then dredge it in flour.

  7. Step 7:

    Step 7

Add a little vegetable oil to a hot skillet and lay in the zucchini rings. Cover and cook over low heat for 3–4 minutes.

  8. Step 8:

    Step 8

Flip them over. The undersides should be lightly golden.

  9. Step 9:

    Step 9

Spoon the sausage filling into the center of each ring, top with a tomato slice, and sprinkle with a little grated cheese. Cook for another 3–4 minutes. The zucchini will turn tender, the tomato will heat through and soften, and the cheese will melt completely.

  10. Step 10:

    Step 10

Transfer the finished rings to a paper-towel-lined plate to blot off any excess oil.

  11. Step 11:

    Step 11

Your zucchini rings with sausage and cheese are ready! They're delicious both hot and cold. Enjoy!

  • Pick tomatoes that are juicy but firm. Soft ones don't hold their shape — they'll fall apart as you slice and cook them and spoil the look of the dish.
  • The right pan matters: even the best recipe can be ruined by the wrong skillet. Choose a good-quality nonstick or cast-iron pan for even browning.
  • Every oil is good only up to a certain temperature — its smoke point, past which it starts to burn and forms harmful compounds. For frying, reach for an oil with a high smoke point, such as refined vegetable or avocado oil.
