Pan-Fried Zucchini Rings with Sausage and Cheese
Super simple, super easy, super fast, and super tasty! You can make these pan-fried zucchini rings with sausage and cheese in just 30 minutes. Step 1:
How do you make pan-fried zucchini rings with sausage and cheese? Start by gathering your ingredients. I'm using a young zucchini with a tender skin, weighing a little over 2 pounds (about 1 kg). Any cheese works here — just make sure it grates easily. Rinse the zucchini, tomatoes, and onion well.

Slice the zucchini into rounds about 3/4 inch (1.5–2 cm) thick. Scoop out the center of each round to make a ring.

Set up two bowls for dredging. Beat 2 eggs in one, and put the flour in the other.

Finely dice the bologna. Grate the cheese. Slice the tomatoes into rounds about 1/4 inch (0.5 cm) thick.

Add the remaining 2 eggs, the sour cream, and the finely chopped green onion to the bowl of diced bologna. Stir it all together.

Dip each zucchini ring into the beaten egg, then dredge it in flour.

Add a little vegetable oil to a hot skillet and lay in the zucchini rings. Cover and cook over low heat for 3–4 minutes.
