Beer-Braised Beef

The meat comes out soft, juicy, and delicate—as if it were slow-cooked in an old-fashioned hearth. Beer is the secret ingredient: hardly anyone will guess it's in there, but everyone will notice the interesting, unexpected note it adds to the flavor.

    1. Prep the ingredients: rinse the beef well, pat it dry with paper towels, and cut it into cubes about 1 inch (2.5–3 cm) across; season with salt and ground black pepper and toss with your hands. Cut the bacon into sticks. Rinse and peel the carrots and cut into large sticks. Peel the onion and cut into wedges (eighths). Peel the garlic cloves and press them (or grate them on a fine grater). 2. With everything prepped, you can start cooking the meat. Set a large, deep skillet over medium heat and let it get good and hot. Add the bacon and cook, stirring constantly, until crisp. Transfer the bacon to a paper towel to drain the excess fat. 3. Pour the oil into the same skillet, raise the heat to high, and let it heat up. Add the beef in batches and sear on all sides until lightly browned. 4. Add the prepped carrots, onion, seared bacon and beef, minced garlic, and bay leaf to the bowl of a slow cooker. 5. In a small bowl, stir together the soy sauce, Worcestershire sauce, beer, and thyme. Pour the mixture over the ingredients in the slow cooker and stir. 6. Cover the slow cooker and set it to the Stew (braise) mode for 3 hours. The beauty of this setting is that the food cooks a long time at low temperature—much like a slow braise in an old-fashioned oven, where the meat gently simmers and turns incredibly soft and juicy. After three hours, taste the meat. If it's still a bit tough (which can happen with older animals), give it another couple of hours on the same setting. This is also the point to add more salt if it needs it. 7. Once the time is up and the meat is done, open the lid. Whisk the flour and water together in a bowl until smooth, pour the slurry into the pot, and cover again. Cook everything together on the same setting for another 30 minutes (the gravy should thicken slightly). 8. About 15–20 minutes before the meat is done, cook the egg noodles. 9. Remove the bay leaf from the finished dish. To serve: divide the noodles among plates, top with the meat and gravy, and sprinkle everything with freshly chopped herbs. Serve it up and enjoy the results!
