Cooking method
- Battered onions come from Indian cooking. Give them a try — I'm sure you'll love them. You do have to pay attention here — not because it's slow, but because you need to be quick and careful. Why? You'll see for yourself. Let's start from the beginning. First, make the batter. Add the garlic (put through a press), salt, and caraway to the flour, then pour in the milk and beaten egg. The batter should be thick — about the consistency of homemade sour cream. Slice the onions into rings and sauté them briefly in butter, just until slightly softened. Add them to the batter, then finely chop and stir in the hot pepper. Mix everything together. Heat a deep fryer, or just a pot of oil, and once it's very hot, drop in spoonfuls of the batter (I use two spoons for this). Fry until golden brown. A sauce made from sour cream, mint, and cilantro pairs beautifully with these — just blend it all together.
