Albanian-Style Pork with Mayo and Eggs
Garlicky meat — appetizing, savory, and delicious! Albania's history and geography, its mild climate, and its close ties with neighboring countries have all shaped its cuisine in a big way. Albanians are mostly Muslim and don't eat pork, but this dish really does come out best with pork (I've tested it myself). The cuisine is full of variety, and Albanian-style meat is a tasty, filling, and unusual dish. See for yourself when you make it with our recipe.

Cooking method
- Making this dish takes some time chopping the meat — the pieces need to be very small. Add the onion (run through a meat grinder), the eggs, mayonnaise, and cornstarch to the meat and mix well. Add the garlic, salt, and pepper, and mix thoroughly again. Then refrigerate it all overnight. The next day, take the meat out and fry spoonfuls of it on all sides in a skillet, like little pancakes. Finely chopped and pan-fried, Albanian-style meat comes out juicy and delicious — it melts in your mouth and disappears in no time. Enjoy!
