  • This lovely French dish — chicken with avocado — comes together fast and pairs well with just about any side: potatoes, rice, pasta, buckwheat, you name it. I found the recipe on a cooking site, tried it right away, and gave it an A-plus. It turns out light and fresh, great for anyone watching their diet, even with chicken on the menu. Rinse the chicken fillet well and cut it into strips (not too thin). Peel and slice the zucchini and chop the leek. Put all of these in a skillet and fry them well in oil. Season with salt and pepper and add the ground ginger. Dice the avocado and cut the seeded orange into segments, then add both to the skillet. Separately, toast the chopped almonds in a dry pan and stir them into the chicken just before it's done. Mix everything well, transfer to a serving dish, and garnish with fresh dill and parsley.
