Bean and Crab Stick Salad

A quick crab salad with beans for weekdays and holidays. This salad is made of my favorite ingredients. It comes together simply and quickly, which is a huge plus for a New Year's menu. The salad is colorful and bright, and its look will dress up your holiday table. Be sure to save the recipe!

    How do you make a bean and crab stick salad? Measure out all the ingredients. You'll need red canned beans in water, a large yellow bell pepper, crab sticks, cherry tomatoes (about 5-6), tasty hard cheese, and seasonings.

    Tip the canned beans into a sieve or colander and let the liquid drain.

    Thaw the frozen crab sticks ahead of time. Without removing the packaging, lay them on a cutting board and let them thaw. Now peel off the film. If it's hard to unwrap, hold the sticks over steam for 1-3 seconds. Now cut them into medium cubes.

    Wash the bell pepper and pat it dry with paper towels. Cut it in half, seed it, and cut it into large pieces. For a pretty, bright dish, you can use pepper halves of different colors.

    Quarter the cherry tomatoes. You can use large tomatoes instead; in that case choose meaty but firm ones, since soft ones don't hold their shape and turn to mush when cut, hurting the look of the dish. You can cut them into cubes or strips. Be sure to drain off the juice from cutting, or it'll make the salad watery.

    Take a tasty hard cheese and cut it into small cubes. You can replace it with fresh (non-brined) mozzarella.

    In a small bowl, combine equal parts sour cream (any fat content) and mayonnaise with garlic pressed through a garlic press, salt, and ground black pepper. Mix. Adjust the garlic to your taste.

    Put the crab sticks, bell pepper, canned beans, cherry tomatoes, and cheese in a salad bowl. Dress the salad with the mayonnaise-sour cream sauce. You can also dress the salad with just sour cream, no mayonnaise, or with thick plain yogurt.

    Mix everything well. Serve the salad in one big bowl or in individual ramekins. You can garnish it with sprigs of fresh dill or curly parsley or basil leaves.

  • The salad looks neat and pretty if you cut all the ingredients into pieces of the same size and shape (cubes, for example).
  • How do you buy good crab sticks? Always check the product's expiration date. Surimi (minced white fish) should be first on the ingredient list. Important! Don't buy the product if there's frost on it - that's a sign it's been refrozen. Fresh sticks should be free of gray and yellow spots, firm, and slightly moist. If the product is sticky, it's spoiled.
  • It's better to make the mayonnaise yourself - it'll be tastier and better for you. See some interesting homemade mayonnaise recipes here. You can also use sour cream or plain yogurt as the dressing - on their own or mixed with mayonnaise in any ratio you like, which lowers the calorie count.
