A bright, juicy fresh vegetable salad with mozzarella. I'd long wanted to make a salad that captured all the colors and flavors of summer - one that's light enough yet has more than three ingredients. That's how this salad came about.

Step 1:
How do you make a fresh cucumber and tomato salad with mozzarella? Wash and dry the vegetables.

Cut the radishes into rounds, salt them, and leave them for 10 minutes.

Halve the cherry tomatoes.

Cut the cucumbers into rounds.

Seed the bell pepper and cut it into small sticks.

Cut the mozzarella into small pieces.

Chop the dill finely. Tear large lettuce leaves by hand.

Combine the vegetables and herbs in a salad bowl, salt them, dress with olive oil, and mix.
- Choose juicy but firm tomatoes. Soft ones don't hold their shape well - they'll turn to mush as you slice and assemble them and spoil the look of the dish.
