Fresh Cucumber and Tomato Salad with Mozzarella

A bright, juicy fresh vegetable salad with mozzarella. I'd long wanted to make a salad that captured all the colors and flavors of summer - one that's light enough yet has more than three ingredients. That's how this salad came about.

How do you make a fresh cucumber and tomato salad with mozzarella? Wash and dry the vegetables.

  2. Step 2:

    Step 2

  3. Step 3:

    Step 3

    Halve the cherry tomatoes.

  4. Step 4:

    Step 4

    Cut the cucumbers into rounds.

  5. Step 5:

    Step 5

Seed the bell pepper and cut it into small sticks.

  6. Step 6:

    Step 6

Cut the mozzarella into small pieces.

  7. Step 7:

    Step 7

Chop the dill finely. Tear large lettuce leaves by hand.

  8. Step 8:

    Step 8

Combine the vegetables and herbs in a salad bowl, salt them, dress with olive oil, and mix.

  • Choose juicy but firm tomatoes. Soft ones don't hold their shape well - they'll turn to mush as you slice and assemble them and spoil the look of the dish.
