Step-by-step cooking
Step 1:
We take special, round-grain rice, it is sold in stores (for example, for sushi, i.e. Japanese varieties). If your budget does not allow, buy ours, but not the cheapest, otherwise it will boil into mush. We cook according to the instructions. First, flushing under the tap and pumping clean water.
Step 2:
Fill the rice with water in a ratio of 1:1. Cook the rice without salting. As soon as the water boils, cook for a quarter of an hour, and then insist for 10 minutes under the lid. I told you how I did it, but let me remind you - we cook according to the instructions of the kind of rice that you have.
Step 3:
While this process is going on, we will have time to cut the peeled cucumber into cubes. So that both the taste of the roll and its appearance were even cooler, I sliced Bulgarian pepper. You don't have to do this if you decide to make rolls with cucumber only.
Step 4:
So, the rice is ready. We will send here a mixture of soy sauce and rice vinegar. Stir everything and cover with a lid for 5 minutes. Then open the lid, because the rice should cool down.
Step 5:
If the rice has cooled down, put a special mat (bamboo) on the bed, and if it is not there, take an ordinary towel. By the way, it is necessary to put the nori to yourself with a rough side.
Step 6:
Put a pot of water next to it and, dipping your hands into it each time, spread out a thin layer of rice. Thin, because otherwise, you will not notice the taste of the filling – the rice will interrupt it.
Step 7:
Carefully spread out the filling in the middle – cucumbers (in your case) with pepper (and so I decided to do this time).
Step 8:
And we will smear it thinly (so that, again, not to kill the taste of the filling) with lean mayonnaise. You can sprinkle the filling with soy sauce, for example, or whatever you like best. Say, a thin layer of wasabi.
Step 9:
That's it, let's roll up, helping ourselves with a mat. And do not forget to leave 1.5-2 cm on the opposite edge to you.
Step 10:
Here is our roll and ready.
Step 11:
Do not forget to moisten the empty space with water at the end, complete the folding and compress the roll well with your hands to compress the rice and connect it with the filling. Let it lie like this – in a rug - and lie down.
Step 12:
Cut with a sharp knife. And we serve!
And more tips
When laying rice on the hole, do not forget to leave 1.5-2 cm of empty space from the edge opposite to you, but do not fill the sheet very tightly. Rice should lie in a thin layer, otherwise huge rolls will turn out. And this is not very aesthetically pleasing. The rolls should look elegant.
It is difficult to cut rolls without knowing the secret. And there are two secrets. The first is a sharp knife. Second, wetting the blade with water every time you are going to cut. And finally, do not cut the roll, if the rice is still even slightly warm, the roll will fall apart.
Do not overdo it with wetting your hands – moisture can get on the nori leaf, and it will soften, it can break through. If anything, having rolled up the roll, then let it stay in the air, you'll see the leaf and come to its senses.
If you know that you are using all the ingredients prepared right now, do it. But, if you do it at one time, then the products from the recipe can be half–cooked or stored, for example, rice so that it does not get stuck and foreign odors do not accumulate in the refrigerator.
Lean roll is, in addition to lean products, both fish and caviar. After all, there are days in the fast when these products are allowed. Therefore, you can add to the cucumber on such days and pieces of salmon or other delicious fish, and any caviar.
If there is no cream cheese, and it is impossible to fast it, take lean mayonnaise – it will decorate the taste of the roll.
