Chinese-Style Sweet-and-Sour Pineapple Sauce

You simply have to try this unusual sauce! This sweet-and-sour pineapple sauce is wonderful with pan-fried meat or fish. Honestly, to my mind it's less a sauce than a side dish — but a very light, tasty, fragrant one that goes perfectly with meat.

    Gather your ingredients and let's make this sweet-and-sour pineapple sauce. If your canned pineapple comes in rings, cut it into chunks; if you bought it already in chunks, there's nothing to do.

    Dissolve the starch in the water in a separate bowl (I use potato starch).

    In a small, preferably heavy-bottomed saucepan, combine the tomato paste, soy sauce, and the pineapple, lemon, and orange juices. Set it over low heat and warm it through.

    As soon as the sauce starts to bubble, add the pineapple. Stir and let it cook for about 1 minute.

    Take the sauce off the heat, transfer it to a serving bowl, and serve right away — this is best served hot. If you think it needs more salt, add some to taste, though the soy sauce usually provides plenty.
