Smoked Mackerel, Potato, and Apple Salad

  • I first tried this at a café in Tallinn, and it's been my favorite hot-smoked-fish salad ever since — the cook was kind enough to share the recipe. We all know fish is wholesome and good for us, and this salad is a nice way to add variety to your fish dishes. Pull the fish into small pieces by hand, or remove the bones and chop it with a knife. Cut the boiled, peeled potatoes into small cubes. You can leave the apple unpeeled; cut it into cubes too. Red onion pairs beautifully with fish and adds a little zip to the salad — chop it finely. You can grate the eggs on a coarse grater or chop them with a knife. Combine everything, dress with mayonnaise, and mix well. This salad looks lovely in individual dishes, garnished with fresh herbs and crackers. You can also serve the hot-smoked-fish salad simply on crackers or slices of bread. It's a great dish for both everyday and party tables.
