Millet Palyanychky (Ukrainian Millet Cakes)

A great way to shake up your usual menu — a healthy breakfast! Millet palyanychky are a tasty Ukrainian dish. A palyanytsya is a round, flattened loaf of bread; here, palyanychky are little round cakes made from an ordinary milk-and-millet porridge. Simple, everyday ingredients come together into an original, wholesome dish that tastes a lot like syrniki (cottage cheese pancakes).

Cooking method

    Pour boiling water over the millet twice, draining it each time. Add the scalded millet to the milk (mixed with the water, salt, and sugar) as it comes to a boil. Cook until tender, stir in the butter, and let it cool a little. Then add the cottage cheese, vanilla, and egg to the porridge.

    Mix thoroughly until completely smooth.

    Shape the mixture into round cakes and dredge them in flour.

    Fry the palyanychky over medium heat until golden brown on both sides. Frying them in clarified butter makes them even tastier and more fragrant. Serve them up with sour cream, condensed milk, or your favorite jam. Enjoy!
