Fluffy Little Kefir Puffs
Deliciously fluffy fried puffs! The kids will be thrilled — especially good with fresh sour cream and a cup of tea!
Cooking method

Step 1:
Sift the flour together with the vanilla.

Step 2:
Beat the egg with the salt and sugar, then add the oil and stir well again. Stir the baking soda into the kefir and let it sit for 10 minutes.

Step 3:
Combine the egg mixture with the kefir and stir together.

Step 4:
Add the flour a little at a time, stirring as you go. You may need slightly more or less. The dough shouldn't be heavy; if it sticks badly to your hands, rub a little vegetable oil on them.

Step 5:
Dust your work surface with flour and roll the dough out about 3/4 inch (2 cm) thick. Cut out shapes with cookie cutters. No cutters? Cut rounds with a glass and make cuts on four sides without going all the way to the center — they'll open up into little flowers as they fry.

Step 6:
Fry in vegetable oil on both sides, like griddle cakes. These puffs are especially good with sour cream, or with jam or preserves.
