"Good Mood" Baked Omelet

I threw this together from whatever I had on hand... and it came out delicious! I was in a good mood, took a look in the fridge, and this was the result. It turned out really tasty — this omelet is perfect for a Sunday breakfast!

  1. Step 1:

    Finely chop the garlic. Cut the red onion into thin strips.

    Dice the bell peppers.

    Dice the bacon, ham, or pork belly. (I used my own home-baked pork belly.)

    Cut the tomato into wedges.

    Finely chop the green onion.

    Slice the potatoes thin and fry them in olive oil for 5 minutes.

    Add the rest of the ingredients to the potatoes.

    Keep frying for 5–7 minutes. Season with salt and pepper to taste. Transfer to a baking dish greased with olive oil.

    Beat the eggs with the cream, season with salt and pepper, and stir in the chopped green onion.

    Pour this mixture over the vegetables and bacon.

    Bake in an oven preheated to 350°F (180°C) for 30 minutes.

    Let it cool a little, cut into portions, and dig in! Enjoy!
