Classic Cottage Cheese Pancakes
Pancakes with a light, tender cottage cheese filling — a great way to start the day! I've known the recipe for these since I was a child. Cottage cheese pancakes are one of my grandmother's signature dishes. They come out very thin and pliable, and the cottage cheese filling gives them a one-of-a-kind flavor. In my family, cottage cheese pancakes are considered special-occasion food.

Cooking method
- Beat the eggs with the sugar and salt, then add half the milk and the sifted flour. Mix well, then add the remaining milk and the vegetable oil. Stir everything into a smooth batter. Cook the pancakes in a preheated dry pan on one side only, and stack them cooked-side up. Now make the filling: mash the cottage cheese with the egg yolks and softened butter, mixing the filling thoroughly. Spoon a tablespoon of filling onto the center of each pancake and fold them into envelopes or roll them up. Fry the filled pancakes in melted butter over low heat on one side, then flip, cover with a lid, and warm through for 5 minutes. Your cottage cheese pancakes are ready — enjoy!
