Latvian-Style Apple Fritters

Sweet apple slices in an unusual batter. Give them a try! I'm a big tea drinker — I have a few cups a day. And since I don't worry much about my figure, I like something sweet alongside it. Store-bought cookies and candy have gotten pretty old, which is why lately I've been making my own tea-time treats more and more. Today I'd love to share a wonderful recipe from Latvian cuisine — Latvian-style apple fritters.

  • To start, mix the egg whites with the salt, sugar, and half of the milk. Next, add the flour and work it into a smooth batter. At the very end, pour in the remaining milk. Let the batter rest for 25–30 minutes to develop. Meanwhile, peel and core the apples, cut them into rounds about 1/2 inch (1–2 cm) thick, and sprinkle with sugar. Once the batter has rested, fold in the whipped cream and stir. Now on to the frying: spear an apple round on a fork, dip it in the batter, lower it into a skillet with hot fat, and fry on both sides until golden brown. Dust the finished fritters with powdered sugar and cinnamon. Serve the apple fritters hot.
