We can use any mushrooms for the filling, although the champignons in this case may turn out to be a little bland.
Finely chop the onion and garlic, and fry them in butter until transparent. Then add the chopped mushrooms there and fry them over high heat. Mix crackers, parsley and seasonings in sour cream and pour all this into a frying pan too. Put one tablespoon of filling in each pancake and roll it up.
In a cast-iron frying pan, melt the butter, add flour and fry it for a while, stirring constantly. Gradually add milk, stirring after each serving. When the mixture boils a little, add the first batch of grated cheese with seasonings. It is very important to make sure that the cheese melts, but does not burn.

Preheat the oven. We put the stuffed pancakes in a greased form, pour the sauce on top, and bake for 15-20 minutes.
