  • Kefir pancake batter: the whole ingredient list is simply egg, kefir, baking powder, sugar, salt, and flour. Mix it all together into a smooth batter. Sometimes the batter comes out a little too thick — no big deal; just stir in a splash of warm water. Don't forget to add the oil right into the batter — that keeps the pancakes from scorching as they cook. Now, is the pan good and hot? Grease it with sunflower oil, or any vegetable oil you like. I usually ladle the batter across the whole pan; try to spread it in a thin layer so the pancakes come out even, not lumpy. Cook right away, keeping an eye out so it doesn't burn — flip it in time and take it off the heat when it's done! And remember to re-oil the pan after each pancake. Whatever you usually serve pancakes with, go with that. As for me, I typically serve kefir pancakes with honey, condensed milk, or sweet jam.
