Chicken Liver Crepes with Cheese and Garlic Filling

    How do you make chicken liver crepes with cheese? Rinse the livers, put them in a blender, and puree until smooth - I did it in a few batches. Pour the liver puree into a deep bowl. Add the eggs, sifted flour, and vegetable oil, and mix well. Season with salt and pepper, thin it out with the milk, and mix again. The batter should be pourable, like a traditional crepe batter, not too thick.

    Brush a hot skillet with vegetable oil and let it heat for a couple of minutes. Ladle in a small amount of batter and swirl it into a thin, even layer to form a crepe. Cook on both sides over high heat until done. Only oil the pan before the first crepe. Use up all the batter.

    For the filling, put the processed cheese in the freezer for 20 to 30 minutes. Take it out and grate it on the large holes of a grater into a bowl. Add minced garlic and mix in the mayonnaise. The cheese filling for the liver crepes is ready.
