Folded Omelet with Ham, Cheese, and Herbs

    Crack the eggs into a bowl, pour in the milk, and add the salt and flour. Whisk thoroughly with a whisk or fork.

    Heat a skillet (7-8 inches / 18-20 cm) over medium heat and brush it with vegetable oil.

    Pour the egg mixture into the skillet and cover with a lid.

    Prepare the filling: cut the ham (or sausage) into strips and the cheese into thin slices.

    Finely chop the fresh herbs (parsley, dill).

    By now the underside of the omelet has set. The top should no longer be runny.

    Using a wide spatula, carefully flip the omelet, then turn the heat down.

    Lay the ham over half of the omelet and squeeze on some mayonnaise and ketchup.

    With the spatula, gently fold the empty half of the omelet over the filling.

    Cover the skillet and turn off the heat. Let it rest for about 3 minutes so the cheese melts.

    Slide the omelet onto a plate and dig into breakfast.

  • This hearty breakfast omelet is best made one serving at a time. If you double it, you'll need a bigger skillet, and it gets tricky to flip without tearing. You can use two skillets at once, or make them one after another in a single pan. One serving weighs about 250 grams (roughly half a pound) - I find half a serving plenty, since it's very filling. Kids love it.
