Kefir Snack Cake with Turmeric and Cinnamon

A go-to recipe for an everyday kefir cake. This turmeric-and-cinnamon kefir cake is easy to riff on - add spices (cinnamon, nutmeg, ground ginger), any berries or fruit, citrus zest, poppy seeds, chopped nuts, seeds, or a little bran. Just make sure the kefir is warm.

Cooking method

    Get out the kefir, flour, baking powder, vegetable oil, and sugar. The kefir should be warm (95-105°F / 35-40°C).

    Add the spices to the flour (a little turmeric for color, plus cinnamon), along with the baking powder and fine salt. Stir to combine.

    Stir the vegetable oil together with the sugar, then add it to the spiced flour.

    Mix it together, then pour in the kefir.

    Add fruit or berries to taste (frozen black currants and wild strawberries work well). Stir to combine.

    Pour the batter into a baking pan lined with parchment paper.

    Bake for about 35 to 45 minutes at 350°F (180°C). Take the cake out and let it cool.
