Skillet Apple Cinnamon Cake

For anyone without an oven who's still craving something baked. :) A broken oven is what pushed me to hunt for skillet recipes — I love to bake, so I started looking for all sorts of treats you can make on the stovetop. If your oven ever quits, or if it's like my mother-in-law's, which takes forever to heat and bakes unevenly, here's a great apple cake recipe for you.

    Here's everything we'll need. Use medium apples, not too big — but if you like it extra-appley, that's up to you. The eggs are medium too; if yours are small, you'll need a little less flour, so add it gradually and keep an eye on the batter. If the apples are tart, you can add some sugar to them as well, to taste (you can also toss in nuts, dried fruit, chocolate, and so on — it's delicious with any of them). :D

    Mix the eggs and sugar — with a mixer or just a whisk. You don't need to whip them to a foam.

    Add the flour a bit at a time until the batter is thicker than pancake batter. Stir in the baking soda (slaked with a little vinegar), the vanilla, and the cinnamon, mixing well. If you'd rather have a chocolate version, add cocoa too — but in that case use a little less flour so the batter doesn't get too thick.

    Peel and core the apples and cut them into pieces that aren't too large.

    Fold the apples into the batter and pour it into the skillet, which you've greased with butter first (sides included). I also dust it with a thin layer of flour — nothing has ever stuck!

    "Bake" the cake over VERY low heat for about 20 to 30 minutes with the lid on. But it all depends on your quantities (if you used more, or your skillet is small and the cake came out tall) — so keep an eye on it. Mine come out relatively thin and my skillet's bottom isn't very thick, so it only takes me 15 to 20 minutes; for someone else it might be an hour. Just test it with a toothpick or a skewer. At the end you can dust it with powdered sugar, drizzle chocolate over it, and so on. Enjoy!
