Obzhorka Liver Salad with Garlic

Treat your belly to a delicious feast. This Obzhorka ("glutton's") salad with liver comes out very hearty thanks to the sautéed liver in it. You can use pork, chicken, or veal liver. Garlic, pickles, and onion give it a zesty kick, while the sautéed carrots and liver add a touch of sweetness.

Cooking method

    To make the Obzhorka liver salad, gather these ingredients: pork liver, onion, carrot, pickles, garlic, green peas, mayonnaise, salt, sunflower oil, and parsley.

    Trim the membrane from the pork liver and cut it into pieces about 1/2 by 3/4 inch (1 by 2 cm).

    Sauté the liver over medium heat in a skillet greased with sunflower oil. Toward the end, don't forget to salt the liver.

    Shred the carrot on a julienne (Korean-carrot) grater.

    Grease a skillet with sunflower oil. Sauté the shredded carrot over low heat.

    Cut the pickles into thin strips.

    Slice the onion into half-moons and grate the garlic on the fine holes of a grater.

    Combine the liver, carrot, onion, pickles, and garlic. Dress with mayonnaise. Mound the salad into a ring. Fill the center with green peas and garnish with parsley. The Obzhorka liver salad is ready. Enjoy!
