Smoked Chicken and Omelet Salad with Mayonnaise
Salad and omelet in one! It's less a dish than a small miracle. My husband's parents live in the country with their own house and homestead, so every month we get care packages of meat, all kinds of pickles, and dozens of eggs. The meat and pickles are easy—they keep for ages—but eggs are trickier. After a while you just can't face any more scrambled eggs and pancakes, which is why I'm always hunting for recipes that put eggs front and center. So here's one of my go-tos: an omelet salad.

Cooking method
- Start by making the omelet. Beat the raw eggs in a bowl, add the milk and salt, mix well, and strain through a sieve. Pour the mixture into a hot pan with melted butter, cover, and cook over medium heat for 3–4 minutes. Once the omelet is done and cooled, cut it into thin strips. Slice the onion into half-moons and sauté in a little oil, then combine with the sliced omelet. Add the smoked chicken, also cut into strips, along with the finely chopped fresh herbs. Dress with the mayonnaise. Ready to serve—enjoy!
